If you’re looking for a dessert that visually catches your eye, then this forrest moss cake is definitely it. However, the taste is not far behind either, quite the opposite. The combination of soft and flaky pastry with delicate cream and juicy fruit is just perfect.

- 150 g low-fat quark
- 100 g light cream cheese
- 40 g strawberry Jammy Spread (can also be replaced with jam)
- 20 ml maple syrup

Method:
Rinse the baby spinach and mix together with the oil until smooth. Beat the egg yolks with sugar until foamy, add the mixed oil and spinach mixture and then add the sifted flour, baking powder and mix the dough. Then whisk the egg whites with a pinch of salt and stir them into the prepared mixture of other ingredients. Mix carefully. Then take a baking tray (ours was 20×20 cm), line it with baking paper and put it in a preheated oven at 180°C for 20 minutes.
Let the pastry cool, cut off about a 1 cm strip of pastry from any side and put it aside.
Then prepare the cream. Whip the quark with cream cheese, maple syrup and Jammy Spread. Spread the cream over the prepared pastry, garnish with sliced strawberries and sprinkle with the crumbled pastry strip. Then place in the fridge to chill for several hours. Then you can dive into it with pleasure.
